Foodie Friday – Breakfast Muffins

Happy Friday everyone!  Today I have another breakfast recipe for you.  These breakfast muffins are tasty, only have 4 ingredients and can be made in loads of variations by using different flavoured yogurt.

You will need:

2 weetabix
half a muller light yogurt
1 tablespoon of sweetener
1 egg

Crush the weetabix and mix together with the egg, yogurt and sweetener.  I used vanilla flavoured yogurt but you can use any flavour you like.  Divide the mixture evenly into silicone cupcake cases and bake in the oven for 20 minutes at 200 degrees celsius.

Leave to cool for a few minutes before taking out the moulds.

These are great to eat on their own if you’re having breakfast on the go or with yogurt and fruit if you have more time.
