Foodie Friday – Tomato and spinach pasta with roasted veg

Healthy food doesn’t have to be difficult to make. Nothing puts me off more than a complicated recipe with a huge list of ingredients you have to go out and buy. This pasta dish took 20 minutes to make, involved very little preparation and tasted pretty good.


Chilli pasta (can be bought from Sainsburys)
Chopped tomatoes
Smoked sausage (reduced fat)
Red pepper
Fry Light spray
Chilli flakes

Preheat the oven at 200 degrees celsius. Cut the pepper in half and deseed, put on a baking tray and spray with Fry Light spray. Pop them in the oven for 10 minutes. While this is cooking boil the kettle for the pasta and prep the smoked sausage, I cut it into quarters, and fry in a pan with Fry Light.

After the peppers have been in the oven for 10 minutes add the asparagus, spraying with the cooking spray too. Cook for 10 minutes. Put your pasta on at the same time as this will also take 10 minutes to cook. Once the pasta is cooked drain and add the cooked smoked sausage, chopped tomatoes and chilli flakes. Remove the pepper and asparagus from the oven and serve with the pasta.

And there you have it, super quick, super tasty and healthy pasta.
